ENERGY BITES, 3 WAYS

I can’t believe that it is almost August. Summer is flying by! It seems like summer always flies by — something about the relaxed, warm feel of summer makes it feel so fast! Plus we have been filling our days with lots of (COVID-19 friendly) activities which makes time go by even faster! Our favorites have been hiking and pickle ball. We love pickle ball. With all our activities I always need a snack at some point in the day, but I always want something that will be healthy and give me energy! These energy bites are the PERFECT SOLUTION. Plus, I’m sharing three different recipes today so you can pick the flavor you will like best! Or, you can make all three (which is what I suggest). The three flavors are lemon poppyseed, oatmeal raisin, and peanut butter chocolate. These keep really well in the fridge, so I love making a batch of all three and always having them on hand for when I need something small.

For all three of the recipes you can use either rolled oats or quick oats. I’ve used both and they both work fine! I’ve even tried using 9 grain rolled oats and they worked great as well. They gave them a more hearty taste, but they were delicious.

Also, here are a few tips for each flavor:

  • If you want a stronger lemon flavor for the lemon poppyseed ones, add a little lemon zest. The fresh lemon makes them taste like summer!
  • The key to the oatmeal raisin flavor is the molasses! It puts them over the edge and really makes them taste like a cookie.
  • The kind of peanut butter you use will effect how much honey you need. If you use natural peanut butter, you will want to use the full amount of honey the recipe calls for to sweeten it up a bit. If you use normal peanut butter, you may want to cut back on the honey a little, depending on how sweet you like it.

Lemon Poppyseed Energy Bites

Ingredients
  

  • 1 cup oats
  • 2 tbsp poppyseeds
  • 1 tbsp ground flax
  • 1/4 cup honey
  • 1/4 cup coconut oil melted
  • 1/4 cup lemon juice
  • 3 tbsp almond milk

Instructions
 

  • Mix all the ingredients in a medium bowl and stir until everything is combined.
  • Using a cookie scoop or greased hands, scoop out 1 inch sized balls and put on a plate or parchment paper.
  • Put the energy balls in the fridge for at least 30 minutes to set up.
  • Enjoy! The energy balls will stay fresh in the fridge for 2 weeks.

Oatmeal Raisin Energy Bites

Ingredients
  

  • 1 cup oats
  • 1/2 cup almond butter
  • 1/4 cup raisins chopped
  • 2 tbsp honey
  • 2 tbsp ground flax
  • 1 tsp molasses
  • 1/4 tsp cinnamon

Instructions
 

  • Mix all the ingredients in a medium bowl and stir until everything is combined.
  • Using a cookie scoop or greased hands, scoop out 1 inch sized balls and put on a plate or parchment paper.

  • Put the energy balls in the fridge for at least 30 minutes to set up.
