This Roasted Asparagus and Tomatoes is the perfect appetizer or side dish! It comes together in 20 minutes and looks beautiful.
Roasted Asparagus and Tomatoes
- 1 bunch asparagus about 1/2 pound
- 2 cups cherry tomatoes
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp dried basil
- salt & pepper to taste
- 1/4 cup parmesan
- balsamic glaze optional
- Preheat the oven to 425. Add asparagus and cherry tomatoes to a lined cooking sheet.
- Add olive oil, garlic powder, dried basil, salt, and pepper to the asparagus and tomatoes. Toss to coat well. Cook at 425 for 15 minutes. The asparagus should be tender and the tomatoes should be bursting.
- Plate the asparagus on a plate, then add the tomatoes on top. Top with parmesan cheese and balsamic glaze (if using). Enjoy!
